In the vineyard
Stimulate the living
In the estate, everything is made to obtain quality grapes with an optimal maturity in the most natural way possible. Our cultural methods are soft. We strive to stimulate the living in order to promote the microbial life in our soils and create a space in which the vines can grow harmoniously. We use plant decoctions and sow legumes and faba beans to bring the necessary nitrogen to the roots system. We only treat with products allowed in organic farming, guaranteed with no pesticide residues.
In the cellar
Winemaking and ageing
Our winemaking is guided purely by a daily work of thinking and observation. Each variety (Grenache, Syrah, Mourvèdre) is harvested and vinified separately. The extraction phases are reasoned and the macerations are long. The mechanical actions (punch-down, pump-over, délestages, racking) are not systematic and we don’t use oak during ageing to impact as little as possible the original character of our terroirs. Each year has its own specificities and each cuvée its own identity.
