Soils
The Syrah plants grow on smalt and marl from the Miocene era and the Grenache plants grow on the terroir said ‘la Grande Terrasse des Garrigues’ made of worn stones and limestone pebbles and of brown clay.
Production
Training: double Royat cordon ; Yield: 28 hL/ha ; Plants average age: 25 to 50 years.
Winemaking
100% of destemmed grapes. Pre-fermentation cold maceration. Fermentation by indigenous yeasts. Reasoned punch-down and pumping-over. Winemaking in stainless steel tanks for 3 weeks. Ageing follows in underground concrete tanks for around 18 months.
