Winemaking
The harvest is completely destemmed. It is then pressured in a pneumatic press and the must goes to a stainless steel tank.After a first settling, fermentation is done at low temperature, on fine lees with bâtonnages. We don’t seek malolactic fermentation. We do an early bottling, after 6 to 9 months of ageing, with half of the volume in new barrels .
