Soils

Training: Gobelet on poles ; Yield: 20 hL/ha ; Plants average age: Grenache 60 years and Syrah 35 years.
Winemaking
Grapes are 100% destemmed, cold pre-fermentation maceration. Fermentation with indigenous yeasts. Reasoned punch-downs and pumping-over. Winemaking in stainless steel tanks for 3 weeks for syrah wines and 1 month for grenache wines. Ageing in egg-shaped tanks for 12 months followed by stainless steel tanks before bottling 6 to 12 months later.
