Soils

Miocene terroir: sandy stony soils from Helvetian smalt (middle of the Miocene: circa -14 millions years) locally called “terres blondes” (blond earth). And Trias era terroir on hillsides: colored marl, cargneules , gypsum, salt.

Production

Training: double Royat cordon and gobelet ; Yield: 35 hL/ha ; Plants average age: 5 to 60 years.

Winemaking

100% of destemmed grapes. Pre-fermentation cold maceration. Fermentation by indigenous yeasts. Reasoned punch-down and pumping-over. Winemaking in stainless steel tanks for 3 weeks. Ageing follows in underground concrete tanks for around 18 months.
