Soils

Sandy and not stony soils from Helvetian smalts ( middle of Miocene, 14 millions years ago) locally called “blond earth.

Production

Yield: 22 hL/ha ; Plants average age: 25 to 45 years.

Winemaking

Grapes are 100% destemmed and sorted ; skin maceration at low temperature, settling, alcoholic fermentation with indigenous yeasts for a month at 12°C on fine lees. Fermentation is stopped through mutage keeping 100 g/L residual sugars, ageing in stainless steel tanks.
