Soils

Training: Gobelet ; Yield: 8 hL/ha ; Plants average age: Grenache 55+ years and Mourvèdre 35 years.

Winemaking

Grapes are 100% destemmed, cold pre-fermentation maceration. Fermentation with indigenous yeasts. Reasoned punch-downs and pumping-over. Winemaking in stainless steel tanks for 1 month. Ageing in amphoras for 12 months followed by stainless steel tanks for at least 24 months.
